- En aceite freímos la mitad de cebolla picada, el jitomate escaldado, pimienta negra molida, hojas de laurel y cocinamos a fuego bajo durante unos minutos.


- Una vez cocidos los jitomates, agregamos a la licuadora junto con la cebolla y el apio y licuamos.

- En una cacerola Con poco aceite agregamos las albóndigas, fremos y sellamos una vez que las albóndigas se frieron se agrega la salsa de jitomate, y luego incorporamos medio litro de caldo de pollo (previamente tibio) rectificamos sabor y dejamos hervir a fuego bajo por 40 minutos.
Si la salsa se ve muy espesa agregamos más caldo de pollo tibio.
