  1. Cortamos alrededor de la calabaza unos centímetros por debajo del centro, la idea es hacer un cuenco con el zapallo, quitamos las semillas y las reservamos, limpiamos bien la cavidad de la calabaza.
  2. Con la ayuda de un cuchillo emparejamos el borde, y con una cuchara raspamos para quitar el excedente de zapallo, dejando un espesor de un centímetro aproximadamente, con el zapallo que retiramos podemos hacer una sopa o picar y cocinar para una tarta.
  3. Pincelamos el interior con aceite de oliva y llevamos a horno medio unos 40 minutos o hasta que este cocido, podemos comprobar la cocción introduciendo la punta de un cuchillo, si entra con facilidad ya estará listo, quitamos del horno y dejamos enfriar.
  4. Rallamos la zanahoria, picamos finamente el verdeo o cebollín, la cebolla y el morrón.
  5. Desgranamos el choclo lo colocamos en una cacerola con la cucharada de juliana o algún condimento que aporte sabor, agregamos agua y llevamos a fuego fuerte una vez que rompe el hervor bajamos el fuego y cocinamos 3 minutos, colamos y reservamos.
  6. En un sartén colocamos un poco de aceite y cocinamos los vegetales picados, agregando la cucharada de provenzal y un poco de sal, cuando estos estén cocidos los agregamos al choclo y mezclamos bien, corregimos la sazón.
  7. Colocamos en el fondo de la calabaza dos trozos de queso fresco, completamos con el relleno a un centímetro antes del borde.
  8. Cubrimos con una capa no muy gruesa de queso agregamos la albahaca picada encima, y por último el medio tomate cortado en gajos.
  9. Llevamos nuevamente al horno 10 minutos, y ya estará listo!!!!! es realmente muy sabroso rinde para 4 porciones,
