- Mezclar la carne o atún, el arroz, sal, pimienta, comino y mantequilla. Hasta que quede todo integrado.


- Escarbar las calabazas dejando la cáscara un poco firme y desechando en relleno. Sin perforar.
- Rellenar cada calabaza con cuidado y que no quede muy apretado.

- Poner la mantequilla clarificada en un acitronarla ; agregar la cebolla para acitronarla; después agregar el jitomate y el puré; se sazona. y se agrega el consomé



- Al comenzar a hervir, se agregan las calabazas rellenas por 15 a 20 minutos. Se separan del calor reposando y se procede a servir con yogur natural por encima.
- Clarificar mantequilla.- colocar 1 litro de mantequialla en una cacerola al fuego lento. cuando revienta el hervor se le agrega trigo molido medio (1 taza) al reventar el 2ª hervor apagar y filtrar a un frasco.

- Presentar en plato las calabazas como se indica.
